Wild Mushroom and Escargot Pizza
Ingredients for Wild Mushroom & Escargot Pizza
14” Pizza Dough ball
3 oz Creamy Basil Pesto Sauce
16 ea Escargot, cleaned and drained
3 oz Mozzarella Cheese
3 oz Provolone Cheese
1.75 oz Butter
1/6 oz Parsley, chopped fine
1/16 oz Garlic
1/16 oz Shallot, chopped fine
1 tsp Salt
1/16 oz Pepper
Dash of Nutmeg
5 oz Mixed Wild Mushrooms, rinsed
Method for Escargot
• Combine Butter, Parsley, Garlic, shallots, salt, pepper and nutmeg. Place Snails in butter mixture and heat in oven till butter sauce begins to boil.
Method for Pizza• Preheat oven to 425°F.
• Stretch one pizza dough ball to 14”. Place pie onto pizza stone. Spread Creamy Basil Sauce evenly onto pizza pie leaving a 1” margin for crust. Sprinkle cheese on top of sauce. Toss wild mushrooms evenly on top of cheese. Distribute prepared Escargot evenly on top of mushrooms.
• Bake in oven for 18 minutes or until crust texture is as desired.
