Ingredients description

Ingredients for Steak Grilles

1 Beef Tenderloin
Black Pepper, to taste
Salt, to taste

Ingredients for Bearnaise Sauce

3 Eggs, separate white from yolk
Any Citric Acid (lemon juice or wine)
Shallots, to taste
Pepper Sauce, to taste
White Ground Pepper, to taste
Salt, to taste
1 cup Butter
Preparation

Method for Steak Grilles

• Grill with black pepper.

• If rare, 2 minutes each side.
• If medium rare, 4 minutes each side.
• If well done, 10 minute each side.
• Service with bearnaise sauce.
Method for Bearnaise Sauce• Sautée shallots.
• Combine eggs, shallots, pepper sauce, white ground pepper, salt, butter and 1/2 oz water in a bowl.
• Heat 1/2 liter of water to a boiling point. After it reaches a boiling point, add bowl of ingredients to the hot water, whipping the ingredients until a creamy consistency has been reached.
• Pour over the steak and serve
