What You Need

Ingredients description

  • 3 cups sausage (Andoule recommended)
  • 3 cups pulled chicken
  • 2/3cup bacon
  • 2 cups finely chopped onion
  • 6 scallions chopped
  • 6 garlic cloves chopped
  • 2 large red bells
  • 6 stalks celery chopped
  • 8 cups ripe tomatoes
  • 1 tsp dry oregano
  • 2 tsp chopped fresh basil
  • 1Tbs chopped fresh cilantro
  • 1 tsp fresh thyme
  • 3 bay leaves
  • 1 tsp ground cumin
  • 2 tsp cayenne
  • 3 cups rice
  • 3 cups chicken stock
  • Preparation

Getting Started

1. Heat olive oil add sausage and bacon cook until bacon crisp add onion, scallions, garlic, bell peppers, and celery and sauté for five minutes more.

2. Add tomatoes and seasonings, stir thoroughly and cook for five minutes. Stir in the stock and bring to a boil. Add the rice and stir well. Remove from the heat and cover with foil

3. Place in the oven for fifteen minutes. Add remaining sausage and pulled chicken
And cover for fifteen minutes more.
