Coffee Rubbed Hanger Steak with Goat Cheese Butter

NGREDIENTS
Coffee Marinade
2 tablespoons garlic, minced
3 tablespoons soy sauce
2 tablespoons whole grain mustard
3 tablespoons coffee, freshly ground
1 cup olive oil
to taste salt and pepper

Goat Cheese Butter
2 oz goat cheese
2 oz butter
1 pinch minced green onions
to taste salt and pepper

Steak
8 oz hanger steak, split, cleaned

Sauce
Red wine demi glace of your choice
Preparation

HANGER STEAK
1. Preheat grill.
2. Combine marinade ingredients in a blender and puree. Marinate hanger for at least four hours.
3. Grill steak over flame until medium-rare.
4. Allow steak to rest before slicing. Slice against the grain. Keep warm.

GOAT CHEESE BUTTER
1. Blend goat cheese, butter, scallions and salt/pepper until well mixed.
2. Keep refrigerated until needed.

ASSEMBLY
1. On a plate, fan sliced hanger steak.
2. Spoon your favorite red wine demi glace over steak and top with a dollop of Goat Cheese Butter.
